Is TAS is working why did you think it was a hardware issue? Any time Roon isn’t working you should try TAS since it is unlikely a hardware issue.
I got so wrapped up in attempting to figure out the issue, I set TAS aside to see if I could solve the problem. Like a crazed idiot!!

This may be of help? I'm running Roon off of my laptop without issue, the pausing issue seems to be when using ios device with Roon. I now have TAS running off of the ipad and Roon running off of the laptop. Great way to A/B a track or album.

but you're not running TAS and Roon together??? I always thought that was a "no-no"

Oh! I didn't know this. I pause one device and go to the other. Still a "no-no"????

This definitely points to a version mismatch between remote (ios device) and server (Extreme).
I suggest to check if both versions are matching up.

Both versions on the laptop is Build 1244. BTW it also paused on the laptop so that rules out my previous observation that it is ios related. Taiko Support reached out, latest Roon update has known issue that they are attempting to resolve...

I’m ordering an aftermarket dac cable for my switch from qsa-lanedri.com as they have a deal going on. I've tested it, and it sounds significantly better than stock.

Is there any further news on whether the LAN cable or the DAC cable sounds best between the Taiko Router and Switch?
$4000 for the cable?! Yikes.
From the FAQs in the PDF:
Are there differences in sound from brand to brand?
We have tested a few different lengths and brands and in high-end everything sounds somewhat different, but the differences are relatively minor relative to the delta to an RJ45 terminated UTP cable, like 1-2% of that.

Hence me jumping on the special deal. I don’t think the faq is referring to audiophile dac cables because as far as I know this is the only one I have found. It’s only possible because what they do is apply qsa treatment to cables.

Anyway I trialled it myself and the difference was about the same as going from a stock cable to an audiophile one pre-taiko. Meaning it wasn’t just 1-2%.
