As per the title , for my part I have just acquired a new set of wireless/bluetooth digital meat probes Viz Typhur Sync Quad , excellent build quality and highly accurate, you can set it to manual control of any and all of the four probes or select automatic , the mobile phone app is highly configurable and a nice feature being that the app or base unit via the probe will alert one to stop the cook at exactly the correct temperature that will have calculated in the optimal resting time included e.g. if one is shooting for 130F final eating temp the app will alert at 120F to remove from heat source and to begin the rest .

 
I use the MEATER which has one probe. Does the same on alertness

I was doing it your way…

Now I use a suis vide and then finish them on a grill the same day, or the next day.
Usually a rub and fridge, and the bark is added on the grill.
