The Pacific NW is known for Salmon. While we have decimated the runs, some more obscure salmon can come back in decent numbers. Pink Salmon that run every other year can range from 500,000 to 10,000,000. This year about 8 million are moving through.
Pink Salmon are fantastic smoked. They are good on the grill but Silvers and Sockete are much better. I don't want to bring King into it. They have a reputation, In my opinion they don't meet.

Anyhow, Pinks. I'm sort of sick of them smoked. My wife loves a Salmon burger. So I started experimenting with pink salmon burgers.
I am completely addicted!!!! These fish with their fairly olily bodies, soft meat and low bone size make the most amazing salmon burgers. You can keep 4. They weigh about 2 to 4 lbs. I take a couple friends with me each trip and we land about 10 fish each. That means were releasing the 2 to 3 lb fish and keeping the 4 to 5 lb fish. Processed thats about 8 lbs on average.

I'm making a mix with no onion. My dog is as addicted as me. I mix pepper, carrot, celery, garlic powerder, salt pepper, bread crumbs, an egg and lemmon juice with the fish. 1/3rd of the fish I grind to a paste. The rest is fine chopped. Then I mix it all together and form it into patties. I cook on a BBQ in a pan wirh butter and olive oil with the lid down on 300 degree. OMG. So amazing. My measure of a fish is can I eat it every day. Ling Cod I can. Salmon?. It gets intense. As a Salmon Burger, I have been gorging for 2 weeks non stop, 2 or 3 times a day, and looking to get more.
