to block emi, rfi and magnetic...what does one use? aluminum, mu metal, copper...? Or all three?

And how do these compare with Stillpoints ERS paper which i thought was some kind of shield as well?

EMI is the general name to electromagnetic interference. Then you must choose what type and the bandwidth of what you want to block. There in no general answer unless you get the Maxwell equations ...

Copper will not block magnetic fields. MuMetal will, at least to some extent. The materials serve different purposes.
